Hello September!
Smart snacking has never tasted so good!
I’ve slowly become a slave to my own kitchen!
But that’s okay by me!
Through out my fitness journey, I’ve experimented and dabbled with more random ingredients and off the wall recipes than I can count!
With fall around the corner, I was inspired to create a protein ball with a southern comfort spin. When I think of fall and holiday treats, sweet potato pie is one of the first that comes to mind!
There’s always more sweet potatoes in my kitchen than I know what to do with so this was a perfect recipe to play with!
Here is what you will need….
1/3 cup mashed sweet potato
1 cup rolled oats
3 tbs powdered peanut butter
1/2 scoop vanilla protein
1/4 cup honey
1/4 cup flax seed
1 tsp cinnamon powder
1/2 tsp ground nutmeg
1/4 cup chopped walnuts/pecans
enough graham cracker crumbs to roll your balls through
This recipe is simple and food processor FREE!
1.) Crush your graham crackers in a small bowl and set aside.
2.) Add the 1/3 cup of your skinless mashed sweet potato in a medium mixing bowl. Throw in the rest of your ingredients except the graham cracker crumbs and mix, mix mix!
3.) Form your mixture into balls and roll through the bowl of graham cracker crumbs. Roll through a couple times to be sure you get a nice coating!
There you have it!
Sweet potato pie protein balls!
Store in your fridge in an air tight container for optimum freshness!
