Lemon Chai Vanilla Protein Cookies

After baking these I promoted this recipe into my top 5 favs!

Lemon Vanilla Chai Protein Cookies

DRY ingredients

4 tablespoons flour (used 2 tbs coconut flour and 2 tbs oat flour)

1 tbs chai seeds

3/4 tsp baking powder

2 Scoops vanilla protein powder (if watching calorie intake just use 1 scoop)

1/4 tsp salt

1 tbs lemon zest

1/2 tsp guar gum (it’s okay to skip if you don’t have any)

WET ingredients

2 tbs coconut oil

1 egg

5-6 drops of liquid sweetener

2 tsp vanilla extract

3 drops lemon essential oil. Lemon extract is okay to substitute.

2 tbs honey

1/4 cup lemon juice

Let’s get started!

You will need two mixing bowls. One for wet ingredients and the other for the dry.

First, whisk all of your dry ingredients into one bowl then set aside. Use the second bowl for the wet ingredients and slowly incorporate in your dry mixture until a dough like consistency is formed.

If it’s too sticky, place in your refrigerator to set. When the dough is ready, scoop a tablespoon amount onto a lightly sprayed baking sheet or parchment paper.

Bake at 325 for 10-12 minutes. Bake for less time if using a convection oven. Protein cooks fast so keep an eye on these babies!
