This one is a hit! I originally wanted to add a small portion of macaroni to this recipe but ended up skipping it. If you’d like, you can add some noodles with the cauliflower to get more of a cheesy macaroni feel!
You will need…
♥ one medium sized cauliflower head
♥ 1/3 cup milk
♥ 4 laughing cow wedges ( I used two white cheddar and two creamy mozzarella)
♥ 1/2 cup shredded cheese
♥ 1/3 cup plain greek yogurt
♥ salt and pepper to taste
Chop your cauliflower head into bite size florets. Place the cauliflower pieces in a microwave safe dish, fill up with water so all of your cauliflower is covered and microwave for 5 minutes. Remove and set aside.
You want your cauliflower softened but not cooked all the way through.
In a small skillet, mix your milk, greek yogurt, cheese wedges and salt and pepper on low heat.
Place your cauliflower in a baking dish and pour your cheese sauce over top. Mix the cauliflower and cheese sauce together and sprinkle your shredded cheese over top.
Bake at 350 for 25-30 minutes.
Remove and let cool.
