Protein Birthday Batter Confetti Cakes! 

Let the birthday celebrations keep on coming!

This month we celebrated my husband and my sisters birthday!

It’s not fair to miss out on any of the good stuff, like eating your own birthday cake!  I prepared this guilt-free alternative you won’t feel bad about eating! Everyone deserves cake on their birthday.

What’s the best part you ask?

It packs quite a punch of protein with two scoops in the batter and 1 scoop used to make my homemade icing!

I used half a box of confetti cupcake mix from Duncan Hines. You can make the whole box if you want and use the left over batter for cupcakes, cookie cakes or other baking recipes. I use dry mix with a lot of things. Try a tablespoon in your smoothies, protein shakes and yogurt!

 

I’m sure we can all agree, nothing smells better than fresh baked birthday cake!

The icing is just as heavenly!

It’s a quick mixture that I often use on top of my waffles, in my oatmeal, as a peanut butter spread, on banana slices…you name it!

 


 I used vanilla protein powder but I think strawberry or cake batter powder (if you can find it) would be good too!

 

Protein Power Birthday Cake

INGREDIENTS

♥ 1/2 a box of Duncan Hines confetti cupcake dry mix and half of all the ingredients listed (I used a small box that yields 12 cupcakes)

♥ 2 scoops vanilla protein

♥ 1 tsp baking powder

♥ 1/4 tsp baking soda

♥ 1 tsp butter extract. I had to add my new butter extract! I mention how amazing this product is in a previous post you can find here.

* I followed the box exactly as is only tweaking a few things! In addition to the box requirements, I added two scoops of vanilla protein. Instead of using eggs or oil, you can substitute if necessary. I did swap out the eggs for egg whites.

Depending on your oven, bake at 350 for 15-20 minutes. Remove and let cool for 10 minutes.

Chocolate icing

My protein icing/frosting creation is one of my best kept secrets!

♥ 1 scoop chocolate protein

♥ 2-3 tablespoons chocolate powdered peanut butter (PB2 or JIF)

Add small amounts of water at a time until you get the desired consistency. Keep it thick. Don’t over mix or add too much water!

 

Add your icing, candles and birthday decorations after your cake has cooled!
