Pumped UP On Protein Waffles For The First Coast Heart Walk!

Today my husband and I are doing our first fundraiser heart walk. My sister was in charge of her works department to help coordinate this activity!

At this particular event you had the option to walk run or jog the three-mile route located in downtown Jacksonville.
We wanted to make sure our energy was high as well as our protein intake. This for me means generous amounts of peanut butter!

The night before I prepped myself cinnamon roll overnight oats with vanilla swirl protein, cinnamon, raisins and berries, topped with maple almond butter!
For my husband I prepared him the best protein waffles this far!! I’m regretting that I didn’t make any for myself!!
I let him chose his fixin’s which consisted of sugar-free whip cream, syrup and gobs of peanut butter!

I honestly think you could use this recipe for pancakes, waffles, muffins, or maybe even mini cookie bites if baked right!

  

Protein Peanut Butter Waffle

1 scoop protein powder ( I used half vanilla from BPI protein and half chocolate from Cellucor)

2 tablespoons peanut butter (or PB2)

1/3 cup egg whites

1/4 cup almond milk

Small handful of quick oats

1 teaspoon caramel extract (optional)

1 teaspoon baking powder

1/2 teaspoon baking soda

♥ Mix all ingredients in your blender or food processor.

♥ Spray your waffle maker and pour in your batter. Close the lid and wait for the ready light switch on then remove. It will be perfect!

It’s been a little crazy with the weather down here in Florida but as soon as we parked and walked to meet my sister, it was safe to say we would be in the clear!  I was honestly surprised how many people made it out! There were tons of local vendors, businesses, organizations giving away free gifts and prizes.

Rey had to show off the goods in his short shorts!

And of course I had to sport my skinny fat girl tank! …and USA fanny pack! 🙂

I know it looks a little funky!

Mission accomplished! All sweat and smiles on this Saturday!

What’s the best part about living next door to a gal with the cutest dog ever that plays with ours and also works at Mojos BBQ Kitchen????!


 Yep, that’s right folks!

Mojos BANANA PUDDING brought to us right as we were walking to our front door!
