Talk about melt in your mouth! I used this same recipe from my blueberry muffin recipe but swapped ingredients with different fruit and protein powder. Every time I bake these, I find it hard not to devour them all at once!
You will need two mixing bowls to prepare the batter.
Bowl #1 Dry Ingredients
1 cup oat flour
1 scoop strawberry protein (I used Universal Nutrition)
1/3 cup stevia or sweetener of choice
1 tsp baking powder
1/2 tsp baking soda
Bowl #2 Wet Ingredients
1/2 tsp vanilla extract
3/4 cup vanilla greek yogurt (I used light & fit greek)
2 tbs egg whites
Pour your dry ingredients in with the wet. Mix until smooth. Lightly spray your mini muffin pan and scoop out a tablespoon of batter for each mini muffin.
