OHHH my lanta! These little balls of cinnamon-sugar goodness truly melt in your mouth! Especially with the sweet coating they’re rolled in!
The cinnamon sugar combination was an experiment that surpassed my expectations! They are finger lickin’ good!
The batter is quite simple and similar to the one I use for my healthier muffins and sweet breads.
Ingredients
- 1/2 cup oat flour
- 1/2 cup almond flour
- 1 tablespoon tapioca flour
- baking powder
- 1/2 scoop vanilla protein
- 1/4 cup egg whites
- 1/2 cup vanilla Greek yogurt
- Sweetener of choice
For the coating I used milled flax seed, cinnamon, a Truvia/brown sugar blend and powdered sugar. I used equal portions of each in 1/4 cup servings and placed them all together in a small bowl.
To prepare this type of recipe and others that are similar, I always combine the wet and dry ingredients in separate bowls before pouring the dry into the wet.
After your batter is prepared, bake at 325 for 10-12 minutes then remove and allow time to cool.
Roll each ball thoroughly through your cinnamon-sugar mixture.
If you find that they aren’t sticking, you can brush them lightly with honey or water before coating.
These are great for a snack or a quick dish to bring to a party or gathering. They look great in mini muffin liners or using fun colorful toothpicks for an easy grab!
