These taste too good to be healthy!
I make a fair share of sweet cheats but this one truly blew my mind. I made my husband taste one from my first batch and I could tell from his eyes they were a success!
They are light, crispy and deliciously minty!
You’ll have to play around and experiment with this one a little. Depending on your protein and your peanut butter powder, it will determine how much coconut oil you will need.
INGREDIENTS
sugar free waffers
2 scoops chocolate protein powder
4 tbsp chocolate powdered peanut butter. I used JIF but PB2 works too!
1 tsp peppermint extract. I used my doTERRA peppermint oil. If you use essential oils you only need 1-2 drops!
2 tbsp melted coconut oil
In a bowl, microwave coconut oil for a few seconds until melted. Careful not to burn! Stir in your PB2 and protein powder.
Add a drop or two of your peppermint oil.
Dip your wafers into the mixture. Allow both sides to get a nice coating. Use your fork to remove and place waffers on a baking sheet with parchment paper.
Move baking sheet to freezer for wafers to set and harden. This will take about 10-12 minutes.
Store in air tight container in your fridge/freezer.
