1 scoop vanilla protein powder ( I used Cellucor where you can buy here)
1/4 cup blended oats
1/2 cup chickpeas or any other white bean
1/4 cup JIF Peanut Butter Whip
3 tbs egg whites
1 tsp vanilla extract
1/2 tsp baking powder and 1/4 tsp baking soda
2 tbs chocolate chips
4 stevia liquid drops or your preferred sweetener of choice
* I LOVE these drops! I didn’t think I would use them much but boy was I wrong! I’ve found myself adding drops to smoothies, protein shakes, oatmeal, homemade ice-cream, most of my baking recipes, my coffee and yogurt cups! Try adding a few drops to plain greek yogurt and a little bit of cinnamon! This will make it taste much better instead of feeling like you’re consuming mouthfuls of sour cream!
1.) Drain and rinse your chickpeas.
2.) Blend your protein powder, chickpeas, eggs and peanut butter into your food processor. Add vanilla, your baking powder/soda and pulse until everything is well blended
3.) Fold in your chocolate chips!
4.) Place tablespoon amounts on a nonstick pan or cookie sheet.
5.) Bake at 350 for 8-10 minutes, 5-8 if you’re using a convection oven!
Keep a close eye on your cookies! Protein speeds up the cooking process. If you over bake, they will get too dry!
