30 Calorie Skinny Banana Peanut Butter Cake Cookies

You guys!

These peanut butter cake cookies are top notch! Only a few simple ingredients and you’ll have a delicious, melt in your mouth cookie in no time!

It was very challenging not to eat the whole batch, before and after it was baked!

I found this recipe from a fellow blogger. I hit a gold mine stumbling across his page!

I had a hard time deciding which recipe to try first but anything with the words ‘cake’ and ‘cookie’ put together, I’m all over it!

Ingredients

♥  3/4 cup oat flour. If you don’t have oat flour, no problem! All it is, is blended up oatmeal. Ta-dah!

♥ 1 and 1/2 medium bananas (mashed)

♥ 1/4 cup JIF peanut butter whip. Whipped peanut butter will help cut your calories down in half!

♥ 1/4 cup sugar free maple syrup

♥ cacao nibs/chocolate chips. Cacao nibs are chips of chocolate in its purest form.

♥ 1/2 teaspoon of baking powder

♥1/4 teaspoon baking powder

*walnuts, sprinkles, protein or peanut butter chips would be good too!

How to…

♥ Combine your oat flour and mashed bananas into a medium sized mixing bowl. It’s important that it isn’t too runny. If it is, add more oat flour.

♥ Melt your peanut butter and syrup in a microwave safe bowl. On the stove is fine too.

♥ Pour your peanut butter and syrup mixture into your bowl of mixed oats and bananas.

♥ Keep blending until a batter is formed. *If you want a thicker cookie you want a thick batter. For a softer, fluffier cookie, you want your mixture to be similar to a waffle or pancake batter. This would mean you need more bananas or syrup.

♥ Add your chocolate chips

♥  Scoop out batter into little balls and place on a lightly sprayed cookie sheet.

♥ Bake at 350 for 10-12 minutes.

♥ Remove and allow to cool for an addition 10 minutes. This will give your cookies a chance to firm up a little.

Enjoy these for a quick snack, late night sweet treat or for a breakfast option, try warming two cookies up in the microwave, crumble into a bowl topped with yogurt and fruit!

There you have it folks! With only 4 core ingredients and under 20 minutes, you will have a low calorie and low sugar, delicious cake cookies!
