Who didn’t love tater tots as a kid!?
I love sweet potatoes cooked every kind of way so I was excited to try this recipe. It was easy and can be customized by adding garlic, green peppers, corn, seasonings and so on!
Ingredients
1 cup cooked, skinned and mashed sweet potato
1 tbsp oat flour
1/3 cup diced onion
1/2 tsp garlic powder
2 tbsp egg whites
optional* 1/4 tsp salt
additional seasonings I used was a pinch of chili powder and Mrs Dash (herb blend)
I think a remix of these by using cinnamon, brown sugar and vanilla extract would be a great snack for your sweet tooth too!
The process…
Preheat to 375F.
Mix all ingredients together until well combined and a your potato batter is formed.
Use about the size of tablespoon of your mixture to form little tater tot shapes and place on your lightly sprayed baking sheet.
If you want the texture of your tots to be a little crispy, use cooking spray to give a light coat over the tops before placing them in the oven.
Bake 20–25 minutes, until golden. Broil the last few minutes to get an even crispier tater tot-like taste!
They are delicious plain but if you want to go with a dipping sauce, serve with ketchup, homemade ranch dip made from greek yogurt and seasonings or a chipotle mustard!
Depending on the size you make, you will roughly consume 10 calories per tot!
