Coconilla Protein Balls

If someone asked me what food I could live on for the rest of my life, it would be protein balls! They are perfect for pre/post workouts, in between meal snacks, for satisfying your sweet tooth and awesome for parties and holidays! This is an alternative way to consume your protein that’s not in a boring shake! You can make these thousands of ways and swap out ingredients with your favs.

 

Ingredients!

1 cup raw almonds

6 large dates (can substitute with 1/4 of a cup raisins)

1 tbs flax seed

1 tsp cinnamon (optional)

1/2 cup peanut butter or any nut butter of choice (almond butter is good with this recipe too!)

1 heaping scoop vanilla protein powder

1/2 cup unsweetened coconut flakes

1 tsp of vanilla extract

1/2 tbs sugar free maple syrup

Instructions!

1 – Place almonds in your food processor and pulse a couple times. Leave a few chunks if you want to add a little crunch.

2 – Blend in your dates/raisins and vanilla extract in with the almonds.

3 –  Add your flax seeds, cinnamon and pulse.

4 – A sticky-like dough will be formed. Transfer your mixture into a large bowl and add your protein powder, peanut butter and coconut flakes. If your mixture is too dry, add more peanut butter!

5 – Get dirty!! Roll dough into bite size balls then put in an airtight container or ziplock bag. You can store these in the fridge (can also be kept in freezer) until you are ready to indulge!

But who are we kidding… If I could really pick only one food for the rest of my life, it would be MAC N CHEESE baby!
