Chocolate Chip S’more Mini Muffins! Made With Protein And Greek Yogurt!

Mix all dry ingredients together

♥ 1 cup oat flour

♥ 1 scoop protein (I used a s’more flavor by Cellucor)

♥ 1/3 cup stevia

♥ 1 tsp baking powder

♥ 1/2 tsp baking soda

♥ 1/4 tsp cinnamon


  

Mix all wet ingredients in a separate bowl

♥ 1/2 tsp vanilla extract

♥ 3/4 cup vanilla greek yogurt (I used light & fit greek vanilla)

♥ 2 tbs egg whites

♥ 3 drops orange food coloring (add more if you want a bolder orange)

  

How to…

Preheat oven to 375.

Combine wet and dry ingredients together in one bowl.

Once your batter is well blended, stir in 1/3 cup chocolate chips.

Lightly spray your pan and tablespoon out your batter into your mini muffin tin.

Bake for 8-10 minutes. Allow to cool before eating! Each mini with chips is around 20 estimated calories!

*TIP* 

For more of s’mores feel, add a small amount of JIF chocolate peanut butter whip spread on top for frosting and crumble graham cracker crumbs and mini marshmallow on top.
