Better Than Betty! Chocolate Sweet Potato Cake Bites!

I’ve out done myself with this one guys!

The sweet potatoes provide a thick and rich cake-like consistency!

You’ll want to pair it with a glass of milk!

I’ve joined the ‘it’s fall ya’ll’ club!

Now let’s kick it off with some sweet potatoes!

Chocolate Sweet Potato Cake Bites

  • Servings: 4-6

INGREDIENTS

♥ 1/3 cup mashed sweet potato

♥ 1/2 tsp baking soda

♥ 1 tsp baking powder

♥ 2 tbs chocolate pb2

♥ 1 tbs cocoa powder

♥ 2 tbs egg whites

♥ 1/4 cup cashew milk

♥ 1 scoop chocolate protein

Sweetener of choice

If you decide to skip the protein add more chocolate pb2 or cocoa powder.

For my sweetener I used liquid drops of stevia. I love using the liquid drops because it makes baking in the kitchen way faster!

The best way I can explain these heavenly bites is that they’re like a chocolatey cake-style brownie!

This will be a staple goodie in my fall foods that’s for sure!

 

Directions

  1. In a large mixing gbgowl add and incoporate all of your dry ingredients together. This includes your baking soda, baking powder, PB2, cocoa and chocolate protein.
  2. In a seperate bowl, mash your sweet potato and blen din your eggs and milk and sweetener. If your sweetener is a powder or dry mixture, add it in with your first step.
  3. Dump the bowl of sweet potato batter into your dry mixture and mix until a batter is formed.
  4. Lightly spray a mini muffin tin or silicone mold and bake at 275 for 10-12 minutes.

*Don’t forget baking with protein cooks things faster!

The smell these give off while baking will have your mouth watering!

 

Remove and allow to cool!
