Updated Broccoli Salad Made LIGHT

I’ve been getting restless with my meal prepping. It’s so easy to prepare the same ol’ dishes. Soon enough we find ourselves turning into a well oiled meal prepping machine.

When going to food buffets (one too many times!), what I loved the most was the broccoli salad from the salad bar!

I would convince myself it was a healthy dish even though the thought of a heavy, sugary, creamy sauce is what kept it all together. Down the road I looked up recipes and boy, was I more than right! Most broccoli salads call for bacon, mayonnaise and almost a 1/4 cup of sugar! No ma’am!

I’m certain any recipe can be swapped with ingredients to be made healthier. As a matter of fact, there’s one right here! I’ve created a healthier version of broccoli salad before but was able to spruce it up a little more!

Prepare a large bowl with all of your dry ingredients

3 raw broccoli florets

1/3 cup sunflower seeds

1/3 cup raisins or craisins

1/4 cup shredded carrots

1/4 cup chopped red onion


In a separate bowl you will blend together the plain greek yogurt and white vinegar. I did a drop of vanilla stevia and realized a little deffinitely goes a long way! That step is optional and completely up to you! Pour and blend this mixture into the bowl of veggies and other dry ingredients, then refrigerate.
