Don’t get my wrong, I love the fall but I’m not a huge pumpkin fan.
However, when I saw a can of pumpkin in my cabinet I was immediately inspired! I get excited just thinking about the holidays but not so excited that my birthday shortly follows.. Yikes!
This will be our first winter season to celebrate the holidays as a husband and wife! For how much Rey and I love the holidays, that’s pretty darn exciting! Yes, you can see I was watching Grey’s Anatomy (guilty pleasure!!)
YOU WILL NEED
1/2 cup chickpeas/garbanzo drained and rinsed
1/4 cup canned pumpkin
3 tablesoon egg beaters
1 scoop protein (luckily I had BPI vanilla caramel)
1/4 t baking powder
1/4 teaspoon baking soda
1 teaspoon cinnamon
*add sweeter to taste if necessary
Drain and rinse the chickpeas. Add all ingredients to a blender or food processor and puree until smooth. May need to add a dash of water or milk to get it all mixed.
Lightly coat dish with non stick spray and pour in batter. You can use a square or round pan.
Bake at 350 for 20-25 minutes.
