Tasty Tuesday! Salsa Lime Chicken For Dummies!

A simple and stress free way to celebrate Tasty Tuesday but let’s not forget about Taco Tuesday either! You can fill inside your taco shells, tortillas, lettuce wraps or eat as is on top of a salad! The lime juice adds a perfect touch of flavor!

Let’s get started!

1.) If using frozen chicken, cook on low for 5-6 hours. If they’re already thawed a good 2-3 hours is all it takes.

2.) Place your chicken in first then layer remaining ingredients on top. Turn on low heat and just like the old infomercial says, set it and….

Ingredients

• 8 chicken tenders or 2-3 large chicken breasts
• chili lime seasoning to taste
• 1 cup rinsed black beans
• 1 cup rinsed corn
• 1 cup salsa of choice
• lime juice

I had my first meal on top of rice. I added plain greek yogurt for a sour cream taste and topped with cheese. Delish!

If you have a good amount of left overs, you can freeze and consume at a later date.
