Chocolate Jack-O-Lantern Muffins!

How fun are these!!!

I found this baking pan at Joannes for 40% off! I’ve been looking for a regular silicone baking pan for ever so I figured I’d test this one and give it a try!

It’s Halloween, it was discounted and I couldn’t resist!

After baking with it, I made It official. I’m obsessed with anything silicone baking related I can’t get over how easy it was to clean and cook with! My husband couldn’t have been happier that he didn’t have to soak and clean out my original mini muffin pan. 🙂

After cooling, these babies just pop on out effortlessly! You can also use silicone trays for molds in the freezer!

Okay! Onto the recipe!…

Mix wet ingredients in a bowl

1/2 tsp vanilla extract

3/4 cup vanilla greek yogurt (I used light & fit greek vanilla)

2 tbs egg whites


Mix dry ingredients in separate bowl

1 cup oat flour

1 scoop chocolate protein

1/3 cup stevia or sweetener of choice

2 tablespoons unsweetened cocoa

2 tablespoons chocolate PB2 or JIF chocolate powdered peanut butter

1 tsp baking powder

1/2 tsp baking soda

Pour your dry ingredients in with the wet. Keep mixing until a batter is formed. Lightly spray your pan (or silicone pan!!!) and scoop out a tablespoon of batter for each mini muffin.



Bake at 375 for 10-12 minutes and allow to cool.

You can eat these for a mid-day snack, for breakfast, or at night as a sweet treat with some peanut butter on top 🙂
