Blend one head of cauliflower in your food processor. Microwave for 10 minutes and with a napkin, press as much moisture out as possible. Let cool.
In a large mixing bowl
Add your cauliflower
1/3 cup of egg whites
1/4 parmesan cheese
salt and pepper to taste
Bake at 425 for 12-15 minutes. Remove and add your toppings. I used spinach, mozzarella cheese, low sodium sauce and chunks of chicken!
Place back into the oven for another 10 minutes until golden brown.
Remove, let cool and enjoy!! Eat it all if you want! Guilt-free!
