I’ve been craving peanut butter and jelly sandwiches so I decided to recreate this classic for a smart snacking option!
This is the fun part about staying fit and getting to play with your food! 🙂
You will need:
1 scoop vanilla protein
1 cup old fashion oats
1/3 cup peanut butter
2 tablespoons PB2 (powdered peanut butter. Or check your local grocery store for JIF powdered peanut butter)
2 tablespoons dry roasted peanuts
1/4 cup sugar free jelly (I used Strawberry)
1/4 raisins (This is optional but adds to the sweetness!)
Crushed up ritz crackers
Directions:
Melt your peanut butter if you need to so its easier to mix.
Add the rest of your ingredients except the ritz crackers.
With this recipe, don’t worry if it gets too dry or wet. If that happens, add more protein powder or oats if too wet and and small amounts of water or jelly if too dry.
Form bite size bites with your dough.
For the coating, crush up your ritz crackers into a small bowl. I tried to keep my pieces bigger so I could have more crunch!
Roll/press your balls into the ritz cracker crumbs.
Allow your balls to chill in the fridge for about an hour then store in an airtight container. I had a few before I let them chill. I couldn’t resist!

TIP: If you like crunchy peanut butter, you can either substitute regular peanut butter for crunchy. if you are trying to cut back on calories use all PB2 or JIF peanut butter whip.
