When I think of fall, I think of hot chocolate, burnt orange leaves, crisp air, comfy cardigans, cinnamon, and of course PUMPKIN!
Here is a twist on the classic pumpkin bread!
Using greek yogurt makes this recipe so light and fluffy! The pumpkin flavor isn’t over powering but just right! I highly recommend baking this one during your holiday season!
It’s so easy and takes under 25 minutes to prepare and bake!
The smell of fall will engulf your home and have your mouth watering!
Ingredients
1 cup oat flour (blended up oats)
1 scoop vanilla protein
1/2 cup greek yogurt ( I used vanilla greek light and fit)
1/2 cup pumpkin puree
2 tbsp egg whites
1/2 tsp vanilla extract
1/3 cup granulated stevia or sweetener of choice
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp pumpkin spice
Directions
Preheat oven to 375.
Combine wet and dry ingredients in separate bowls.
Mix the dry ingredients in with the wet stir until well blended. Foil a mini loaf pan and pour your in your batter.
Bake for 8-10 minutes. Allow to cool before eating!
