After a commercial I saw on TV, I decided to get creative and experiment with a healthy version of onion rings. I’ll admit they don’t taste as good as the blooming onions from Outback but it still hit the spot!
I can’t tell you the last time I had onion rings.
I try to keep foods like that and anything that’s fried off my radar!
This is the first time I made anything like this, so I did have a few glitches. The only thing I would do different is double battering them before placing in the oven.
Here is my batter! If you have other seasonings in mind, throw em’ on in! You can replace ingredients to your preference.
INGREDIENTS
1 large onion
1/3 cup egg whites
1/3 cup whole wheat bread crumbs
1/4 cup parmeasan cheese
2 tablespoons flax seeds
3 tablespoons oat flour
salt and pepper to taste
INSTRUCTIONS
Remove the skin on your onions and cut into slices. Separate them out into rings.
Pour your egg whites in a small bowl. In a separate bowl add all of your dry ingredients.
Dip each ring into your egg mixture and then place into your second bowl of seasonings. Coat completely. If you need to, use a spoon to sift more mixture on top of the ring to be sure it gets a good coating.
Place them on a lightly sprayed cookie sheet. I used foil
Once you have them on your pan, spray them lightly so they can get a little crispy texture when baking.
Bake for 15-20 minutes at 350. I used a small convectional oven so depending on what you use to bake with, it might take longer.
