If you don’t own a professional kitchen tool to shred your veggies, use a cheese grater. I use this method on a variety of vegetables including sweet potatoes, large carrots, squash, and so on. When you prepare your zucchini this way it can be used for countless recipes. I use shredded zucchini on salad, inside of smoothies, breads, casseroles, filler for wraps or burritos, garnish for burgers, cooked into zucchini noodles, or simple side dish prepared to your liking. You can store in the freezer for easy access when ready to use.
